Halloween Dinner Table Set

This cheese ball only has four ingredients and is always a crowd pleaser serve ups as an appetizer!  You can prepare ahead of time which makes it convenient to serve at a dinner party.

INGREDIENTS 
8 oz cream cheese
Finely chopped green onions 
2-3 tbsp of Everything But the Bagel seasoning
Cheddar cheese finely shredded

INSTRUCTIONS
Mix together softened cream cheese, green onion and the everything but the bagel seasoning in a bowl. Form this mixture into a ball and roll in the finely grated cheddar cheese. Place on a piece of plastic wrap and roll the cream cheese ball in it. Tie twine around cheese ball to make the shape of a pumpkin. Place in the fridge and chill for 15 minutes or up to one day in advance. Cut off the twine and serve with your favorite crackers. Use garnish of your choice to make a pumpkin stem.

Pumpkin Baked Brie

It's almost Pumpkin Season and you'll love this Pumpkin Baked Brie! 

It's easy and delicious!

Here's what you need...

1 sheet of puffed pastry (you'll find it in the frozen section at the grocery store)

Fig jam or apple butter

1 Brie wheel

kitchen twine

1 Egg

​

This will bake at 400° for 25 minutes or until golden brown

It will definitely be a hit with family and friends.

Cowboy Caviar

Ingredients

  • 1/2 cup olive oil

  • 1/4 cup granulated sugar

  • 1/4 cup white wine vinegar

  • 1 teaspoon chili powder

  • 1 teaspoon salt

  • 1 pound cherry tomatoes, halved

  • 1 (15-ounce) can black-eyed peas, drained and rinsed

  • 1 (15-ounce) can black beans, drained and rinsed

  • 11 ounces sweet corn kernels

  • 1 red onion, diced

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 cup fresh cilantro, optional, chopped​

Directions

Whisk together the olive oil, the sugar, the white wine vinegar, the chili powder, and the salt in a large bowl. Add the tomatoes, the black-eyed peas, the beans, the corn, the red onions, the green bell peppers, and the red bell peppers. Stir to combine completely. Add in the cilantro and stir. Cover and chill before serving.

Asian Chicken Salad

This dish is a burst of flavors with juicy oranges, flavorful chicken, and a sweet soy-sauce dressing. It's quick and easy to make. The perfect summer salad for satisfying your cravings in no time.

For the salad:

12 cups coleslaw mix

4 cups rotisserie chicken, finely chopped

1 1/2 cups almonds or cashews, toasted and sliced

1 1/2 cups dried cranberries

3/4 cup red onion, finely diced

1/4 cup black sesame seeds

1 1/2 cups cilantro, chopped

1 cup sesame sticks, optional

2 (8.25-ounce) cans mandarin oranges, drained

For the dressing:

1 cup extra-virgin olive oil

1/2 cup balsamic vinegar

4 tablespoons low-sodium soy sauce

4 cloves garlic, chopped

4 tablespoons honey or brown sugar

4 tablespoons ginger, minced

2 teaspoons toasted sesame oil

3 tablespoons water

Directions

In a large bowl, layer the coleslaw mix, the chicken, the almonds, the cranberries, the red onion, the sesame seeds, the fresh cilantro, and the sesame sticks. 

Add the mandarin oranges.

Combine the olive oil, the balsamic vinegar, the soy sauce, the garlic, the honey, the ginger, and the sesame oil in a blender. 

Add the water and blend until smooth.

Lightly pour the dressing over the salad mixture and gently toss to combine.

Step 6 -Serve.

No-Bake Old-Fashioned Peanut Butter Balls

  • Mix the peanut butter, honey and dry milk together in a bowl. 

  • Just a scoop of your choice and form into a ball.

  • Roll in toppings 

  • Chill for 20 minutes

1 Cup Peanut Butter

1 Cup Honey

2 Cups Dry Powdered Milk

Optional: Various toppings to roll in – cornflakes, powdered sugar, nuts, etc…

Keep Strawberries Fresh

My “recipe” this week is fresh strawberries, in fact all berries and grapes. There is nothing as delicious as God’s yummy fruit, and having it go bad in the fridge is so sad.  This really works! Click the video link below to learn more!

Rustic Kitchen

   2 (10 oz.) pkgs. frozen broccoli, cooked & drained

2 c. chopped chicken breasts, cooked

Mix together:

2 cans cream of chicken soup

1 tsp. lemon juice

1 tsp. curry powder

1 c. mayonnaise

½ c. grated cheese

½ c. bread crumbs

(approx. 4 slices toast)

Place broccoli in casserole, add chicken. Pour sauce mixture over all. Sprinkle with cheese, then crumbs. Bake at 350° for 30 minutes.

 

Another one of my mom’s favorite recipes! Quick, easy and a hit with company!

Chicken and Broccoli Casserole

INGREDIENTS

1 head lettuce

1 sm. can chopped olives

3 tomatoes, chopped

1 chopped onion

11/2 1b. hamburger, fried and drained

1 Large can pinto beans, drained

1 to 1 1/2 lb. grated Cheddar

1 lg. bag Nacho cheese Doritos French dressing, recipe to follow

INSTRUCTIONS

Mix all ingredients, adding crushed Doritos and dressing just

before serving. See recipe for dressing.

 

FRENCH DRESSING

2/3 c. cider vinegar

1 tsp. salt

1 c. sugar

2 tsp. Worcestershire

1/2 c. chopped onion

2 c. salad oil

Blend in blender. Refrigerate. Use with Taco Salad.

TACO SALAD

This is definitely a crowd pleaser. Great for a potluck, if you're lucky enough to have a church with potlucks, or just lunch for a crowd. Add the crumbled Doritos at the end and then the salad dressing and enjoy!

Communion Bread

Ingredients

2 c. plain flour

4 1/2 tbsp. oil

4 1/2 tbsp. cold water

1/16 tsp salt

Instructions

​

Mix well and roll out very thin. Form into saucer sized circles. Score horizontally and vertically, forming small squares. Bake at 300 degrees until done. Take out of oven every 5 to 10 minutes and push down bubbles.

Lemon Blueberry Scones

Ingredients

  • 2 cups (240g) flour 

  • 1/3 cup (65g) sugar 

  • 2 tsp (10 ml) of baking powder

  • ¾ tsp tsp (3.75 ml) salt 

  • 1 tbsp (15 ml) lemon zest 

  • 10 tbsp (150 g) cold butter, diced into cubes

  • ½ cup (120 ml) heavy cream 

  • 1 egg 

  • 6 ounces (170g) blueberries

  • ¾ tsp (3.75ml) vanilla extract

EGG WASH:

  • 1 egg

  • 2 tbsp (30ml) milk

LEMON GLAZE:

  • ¾ cup (75g) of powdered sugar

  • 2 tbsp (30ml) fresh lemon juice

Instructions

  1. Preheat oven to 400F (200C).

  2. Line sheet pan with parchment paper.

  3. In a bowl combine flour, sugar, salt, baking powder, and lemon zest. 

  4. Add butter and work by hand until dough resembles a chunky meal. Butter pieces should be these size of a pea. 

  5. In a small bowl whisk together the cream, the egg and vanilla extract. Create a well in the center of the dry mixture and pour wet mixture in the well. Add the blueberries into well. 

  6. Gently mix with a fork or Danish whisk until combined, and then grab dough with floured hands.

  7. Turn dough out onto a floured surface. Shape dough into a square, cut into 4 squares and then cut the squares into triangles. You will have 8 triangles. P

  8. lace the cut scones on a baking sheet lined with parchment paper. Brush each scone lightly with the egg wash. 

  9. Pop the tray of scones into the freezer for 5 mins to firm up, (or fridge for 15 mins) and then bake for 20-25 mins until golden brown.

  10. Meanwhile, mix up the glaze. Add the sugar and lemon juice in a small bowl, and whisk until smooth. Dip a fork in the glaze and then drizzle it over the scones while still on the baking sheet, running the fork back and forth until scone is lightly covered with the glaze.

Who doesn’t love a brunch?  It can be a beautiful shower or bridesmaid's party.  It can even be expanded for a reasonably priced wedding reception.  A brunch can be so classy and fancy and a real budget saver.  The light oven omelet we posted last week goes well with this delicious fruit salad. To the eggs and fruit salad, you can add breads of your choice, muffins, biscuits, mini croissants and butter and jellies on the side.  If you want to add another side, you can’t go wrong with smokies heated in the crock pot with maple syrup.

So here is the yummy salad.  

The ingredients can be multiplied

to feed any number of people.

Strawberries

Kiwi

Bananas

Walnuts

Strawberry syrup

 

The ratio of the fruit is 1 qt strawberries to 2 kiwis and one large banana.  Do not chop up in little pieces.  Slice the bananas, peel and slice the kiwis and quarter or half the strawberries, break the walnuts, but don’t chop.  It is prettier if you don’t chop it up small.  It really is good with strawberry syrup, but if you want it to stay healthy, you can eliminate the syrup.

Oven Omelet Brunch

18 eggs

1 c. sour cream

1 c. milk

1 tsp. salt

½ stick butter

1 c. green onions

​

Mix eggs, sour cream, milk and salt. Add green onions. Melt stick butter in 9 x 13 inch Pyrex dish. Add eggs. Bake at 325° for 30 minutes or until eggs are set. Cut into 12 pieces and serve.

This is such a good recipe, especially for ladies events.

It is light and delicious and uses basic ingredients.

FINEST INGREDIENT

CHOCOLATE CHIP COOKIES

1 c. (2 sticks) real butter, softened

1 1/4 c. firmly packed brown sugar

1/2 c. granulated sugar

2 eggs

1 tbsp. real vanilla

1 3/4 c. freshly ground whole wheat flour

1 tsp. soda

1/2 tsp. salt, optional

2 1/2 c. "Old Fashioned" oats

12 0z. (2 c.) semi-sweet chocolate chips

​

Mix in order given. Cook at 375 degrees for 10 to 12 minutes

Right off the oatmeal box from back in the day.

If you don’t have a mill and most people don’t, you can get whole wheat flour or if not, use plain white, but the idea is to get the most nutrition and highest quality ingredients.

Wooden Kitchen Utensils

Valentine's Day can be super expensive, but it doesn’t have to be.  

If you are thinking of buying chocolates for Valentine’s Day, you might want to consider a delicious, inexpensive alternative. 

This homemade, quick and easy fudge!  

No fancy ingredients, just cocoa, powdered sugar, butter, milk and vanilla.  And the way you make it is even more amazing. Once again, high quality real butter will make your fudge compete with the fudge shops.

Quick and Easy Homemade Fudge

 

Ingredients

1 lb (box) Confectioner's Sugar

1/2 cup Cocoa Powder

1 stick Salted Butter

1/4 cup Milk

1 tsp Vanilla Extract

1 cup chopped nuts (optional)

Instructions​

​

  1. Grease a 9-inch baking pan and set aside.

  2. Add the butter, sugar, cocoa powder, and milk to a microwave safe bowl. Do not mix it.

  3. Place the bowl in the microwave and cook on high (100% power) for 3 minutes. Stir the mixture until completely smooth.

  4. Stir in the vanilla and nuts.

  5. Pour the fudge into the prepared pan and place in the refrigerator until firm.

  6. Cut into 1-inch squares. Store in an airtight container

20 Minute Chocolate Cake

This week’s cake is my go to. It was such a hit at potlucks, I finally had to start giving David a piece at home and taking it to the potluck already cut, or he wouldn’t get a piece at all. It is almost fool proof. I have even forgotten to put the eggs in, and it still tasted delicious, a different texture, but still delicious. Be sure to check to make sure it is done before you ice it. You can just stick a fork in it to check.

Things I love about this cake.

1. It’s chocolate.

2. You can pour the icing on the hot cake when it comes out of the oven, making it quick, easy and foolproof.

3. You don’t have to take it out of the pan.

4. It’s chocolate.

Here's the Recipe

 

1 1/2 sticks margarine 

2 c. self-rising flour 

3 1/2 tbsp. cocoa 

1/2 c. buttermilk or milk and 

1 tbsp. vinegar

1 c. water

2 c. sugar 

2 eggs 

 

Preheat oven to 400 degrees. Bring to a boil margarine, cocoa and water; mix well. four over cups sugar and flour. Add eggs and milk. Pour in large greased pan. fudge icing. 

 

CHOCOLATE FUDGE ICING:

1/3 c. milk

3 1/2 tbsp. cocoa

1 stick butter

1 box powdered sugar

1 c. walnuts, optional

Mix milk, cocoa and margarine into boiler and bring to a boil. Add powdered sugar and nuts. Pour over 20 minute cake while hot.

Coconut Cloud Cake

If you are looking for a delicious cake with just a few ingredients that is super quick and easy, this one is a winner—also from my mama’s kitchen!  You will be volunteering to bring dessert every time!

COCONUT CLOUD CAKE

​

1 pkg. Yellow Cake mix

1 (14 oz.) flaked coconut

2 c. Milk

1 c. sugar

1 (9 oz.)  Cool Whip

 

Prepare and bake cake according to package directions. Use 9 x 12 inch Pyrex baking dish. While cake is cooling bring milk, sugar, and 1/2 coconut to a boil. Do not continue to boil. Punch holes in cake and pour milk mixture over it. Cool completely then top with Cool Whip and coconut. Cover and refrigerate.

Amalgamation Cake

All my life, my mama made this amazing “amalgamation” cake. I have never run into anyone who had even heard of it before. The older I get, the more I want to be sure that traditions are not lost. So, here we go! She cheated a little, even “back in the old days” with a white cake mix, just like the box said to make it. She liked using 3 layers. No icing, just the amazing filling. So here is the recipe.

One upgrade that had to be made was switching the margarine to really high quality butter. If she were still with us, I am sure she would agree!
